Crisp jelly like substance in pineapple?

I live in the Philippines where pineapples grow in our garden. So we only eat fresh pineapple. Never seen what you are talking about. I shouldn't worry you have eaten it and are still here to write your question. By the way pineapples grow on plants about 2-3 ft tall, not trees.
